Yummi Chia’s Vegan Coconut Chia Pudding

Like many great ideas, the inspiration for Yummi Chia’s coconut chia pudding parfaits started in Silicon Valley.

Mindy Park was working as a pastry chef at LinkedIn when she realized people were craving healthier, vegan items.

The world of plant-based baking and cooking was all new to her, so she did some research. That’s when she discovered the benefits of chia seeds and how they could be used to make dessert or breakfast items. Her goal was to create a product that was delicious, sweet, and nutritious. Chia seeds, with their high fiber and protein content, as well as omega-3 fatty acids, were the perfect base for a new treat.

In November 2021, Mindy launched Yummi Chia coconut chia pudding parfaits.

The vegan grab-and-go snacks are gluten-free and soy-free and made with organic ingredients. Most flavors have no added sugar– just chia seeds, coconut milk, monk-fruit extract, and fresh fruits.

The best-seller is the classic coconut vanilla, but peanut butter chocolate banana, and Paradise, a coconut mango pineapple blend are also among customers’ top favorites. You can eat Yummi Chia parfaits straight from the fridge or freeze them for a scoopable, ice cream-like texture.

You can find the 5.5 oz. ready-to-eat product in more than 30 hotel locations across the Bay Area, including Hyatt Regency, Hilton, and Moxy. Yummi Chia is also available for purchase online via Airmart and the GTFO vegan grocery platform.

The Future of Yummi Chia

Mindy hopes to expand the product line to include more chia-based delights. Although Yummi Chia is currently a fairly small-batch operation, Mindy dreams of eventually going nationwide with the brand.
